I made these today. I split the sugar into white, splenda and brown splenda. I also split the oil into 1/3 oil and 2/3 fat free vanilla yogurt. I used more zucchinni as well. I am quite certain I added more chocolate chips as well. They rose beautifully in the oven. I really enjoy them.

Hi! I'm from Chile and a love cooking! (sorry for my "primitive" English)
I was looking for a muffin recipie with zucchini to sell at my University. When a saw your muffin's picture I thought "I have to try this recipe". They were a hit in my class and in my family! So moited and delicious.
Thanks you! I'm verry sorry because I don't have any blog with my recipies to share with anybody D: but some day I'll take a time to build my own website!

These look great! I will have to try them. My son is allergic to eggs so I might have to do a little substituting but I think he would eat these as long as I don't tell him there is zucchini in it! ha.
Did you also put a little brown sugar on the top before you baked them? I can't tell from the picture but looks good!

Thanks for the recipe! I have zucchini on my counter waiting for me to do something with it. I tried a brownie recipe last night that had good reviews but was disseminated, it wasn't very good. I was wondering what to do with the rest. I'm going to try these!

Oh yeah, Hi! I found you through Unplug Your Kids and have been enjoying your blog.
